Chocolate Crinkle Cookies

Chocolate crinkle cookies look like cracked winter ground: dark cocoa dough with white powdered sugar splitting into thin lines. Inside they are soft and fudgy, close to a brownie. The dough is wet and sticky when mixed, which is why it needs a long chill before rolling. A thick coat of powdered sugar is what makes the pattern, so do not be shy with it. They are a fixture on holiday cookie plates.

Instructions

  1. Whisk the cocoa, granulated sugar and oil in a large bowl until the mixture looks like damp sand. Whisk in the eggs one at a time, then the vanilla.
  2. In another bowl, stir the flour, baking powder and salt. Mix them into the cocoa mixture until no dry flour remains. The dough will be soft and sticky.
  3. Cover and chill for at least 2 hours, or overnight, until firm enough to roll.
  4. Heat the oven to 180°C (350°F) and line two baking sheets with parchment paper. Put the powdered sugar in a shallow bowl.
  5. With oiled or damp hands, roll the dough into balls of about 25 g (a generous tablespoon). Roll each ball in the powdered sugar until it has a thick, even white coat.
  6. Set the balls 5 cm (2 in) apart and bake for 10 to 12 minutes, until the cookies are puffed and cracked but still soft in the center.
  7. Let the cookies cool on the sheet for 5 minutes, then transfer them to a rack.

Tips

  • If the sugar coat melts into the dough, roll the balls in powdered sugar a second time just before baking and use a thick layer.
  • For deeper chocolate flavor, stir 1 teaspoon of instant coffee granules into the cocoa. You will not taste coffee, only more chocolate.

Questions and answers

Why didn't my chocolate crinkle cookies crack?

The powdered sugar coat was probably too thin, or the dough was not cold enough. Chill it fully and roll the balls in a thick layer of sugar.

Can I freeze chocolate crinkle cookies?

Yes. Freeze the baked cookies for up to 3 months, or freeze the uncoated dough balls and roll them in powdered sugar just before baking.

Do I have to chill the dough?

Yes. The dough is too sticky to shape when it is warm, and chilling also helps the cookies crack nicely instead of spreading flat.
