Choripán (Argentine Grilled Chorizo Sandwich)

Choripán, from chorizo and pan (bread), is Argentina's favorite street snack, sold at football stadiums, roadside stands and every asado. A fresh pork sausage is grilled slowly until browned and juicy, split lengthwise and tucked into a crusty roll. Chimichurri goes on generously, and many cooks add salsa criolla, a chopped tomato and onion relish. It is simple, so quality counts: use good sausages and fresh bread.

Instructions

  1. Mix the tomato, onion, bell pepper, vinegar, olive oil and salt in a bowl. Leave for 15 minutes so the flavors meld.
  2. Heat a grill to medium-low, with the grate about 15 cm (6 in) above the coals. Do not prick the sausages.
  3. Cook the sausages for 20 to 25 minutes, turning every 5 minutes, until evenly browned and cooked through (71°C/160°F).
  4. Split each sausage lengthwise, leaving the halves joined along one side. Grill the cut sides for 2 minutes until lightly crisp.
  5. Split the rolls and toast the cut sides on the grill for 1 minute.
  6. Tuck a sausage into each roll. Spoon on the chimichurri and salsa criolla and serve right away.

Tips

  • Cook the sausages low and slow. High heat splits the casings and dries out the filling before the center is cooked.
  • For choripán al plato, slice the grilled sausage onto a plate and serve it with chimichurri, salsa criolla and bread on the side.

Questions and answers

What kind of sausage is used for choripán?

Fresh Argentine-style pork or pork-and-beef sausage, sold as chorizo parrillero. Do not use the dry-cured Spanish chorizo, which is meant to be sliced and eaten cold.

What is the difference between a choripán and a hot dog?

Choripán uses a coarse, seasoned fresh sausage grilled over embers and served in crusty bread with chimichurri. A hot dog is a smooth, pre-cooked sausage in a soft bun.

Can I cook choripán in the oven?

Yes. Bake the sausages at 200°C (400°F) for 20 to 25 minutes, turning once, then finish under the broiler to brown the splits.
