Completo (Chilean Hot Dog with Avocado, Tomato and Mayonnaise)

The completo is Chile's answer to the hot dog, sold from stands and sandwich shops everywhere and eaten at football games and parties. A soft bun is stacked with a sausage, a thick spread of mashed avocado, chopped tomato and a generous squeeze of mayonnaise. Chileans call this version the italiano. It is messy, rich and cool at the same time, so keep napkins handy.

Instructions

  1. Simmer the sausages in a pot of water for 5 to 7 minutes, until heated through (74°C / 165°F). Keep them warm in the water.
  2. Mash the avocados with a fork with the lemon juice and salt until creamy but still slightly chunky.
  3. Toast the buns cut side down in a dry skillet or on a griddle for 1 to 2 minutes, until warm and lightly crisp.
  4. Put a sausage in each bun. Spread a quarter of the avocado over each, top with the tomato and finish with a generous zigzag of mayonnaise.
  5. Serve right away, with hot sauce on the side for anyone who wants it.

Tips

  • Use ripe but firm avocados and mash them just before serving so they stay green. The lemon juice slows browning.
  • Warm sauerkraut and a squeeze of mustard are common extra toppings, and a veggie dog works well if you do not eat meat.
