Cottage Cheese Oat Pancakes

Cottage cheese gives pancakes a moist, tender crumb and a serious dose of protein. Blended with oats and eggs, it makes a smooth batter in under a minute, with no flour to measure and nothing to sift. The pancakes are small, golden and lightly sweet, and they hold up well to berries and a drizzle of syrup. They reheat well, so one batch covers a few mornings.

Instructions

  1. Put the cottage cheese, eggs, oats, baking powder, honey, vanilla, cinnamon and salt in a blender. Blend for 30 to 40 seconds, until smooth with only tiny flecks of oat visible.
  2. Let the batter rest for 5 minutes. The oats absorb liquid and it thickens to a pourable, slightly thick batter.
  3. Heat a large nonstick skillet or griddle over medium-low heat and brush lightly with some of the butter.
  4. Pour in the batter in 1/4-cup (60 ml) portions, spaced apart. Cook for 2 to 3 minutes, until the edges look set and bubbles form on the surface.
  5. Flip carefully and cook for another 1 to 2 minutes, until golden and cooked through. Keep warm in a low oven while you cook the rest, buttering the pan between batches.
  6. Serve with the berries, and a drizzle of maple syrup or a spoonful of yogurt if you like.

Tips

  • Keep the heat at medium-low. These pancakes are dense with egg and cheese, so high heat browns the outside before the middle is set.
  • Make them small, about 8 cm (3 inches) across. They are more fragile than flour pancakes and much easier to flip at that size.

Questions and answers

Can you taste the cottage cheese in these pancakes?

Barely. Blending turns the curds smooth, leaving a mild, slightly tangy flavor and a moist, tender texture. The vanilla and cinnamon cover the rest.

Are cottage cheese pancakes high in protein?

Yes. A serving of 2 to 3 pancakes has about 19 g of protein from the cottage cheese, eggs and oats, far more than a stack made with plain flour.

Can I make cottage cheese pancakes gluten-free?

Yes. Use certified gluten-free oats, since regular oats are often processed alongside wheat. Everything else in the batter is naturally gluten-free.

How long does it take to make Cottage Cheese Oat Pancakes?

About 25 min in total: 10 min of preparation and 15 min of cooking.
