Creamy Garlic Spinach Salmon Skillet

Salmon in a creamy garlic sauce with spinach is a restaurant-style dinner that comes together in a single pan. The fillets are seared first for color, then finished gently in the sauce, which picks up the browned bits from the pan. Sun-dried tomatoes add a sweet, chewy contrast to the soft spinach. Serve with rice, mashed potatoes or crusty bread to catch every drop.

Instructions

  1. Pat the salmon dry and season with half the salt and the pepper. Heat the oil in a large deep skillet over medium-high heat.
  2. Place the fillets in the pan skin side down and cook for 4 minutes, until the skin is crisp. Flip and cook for 2 minutes more. The fish will be only partly cooked. Move it to a plate.
  3. Lower the heat to medium. Add the garlic and stir for 30 seconds, then pour in the wine and scrape up the browned bits. Simmer for 1 minute.
  4. Add the cream, thyme, sun-dried tomatoes, Parmesan and the remaining salt. Simmer for 3 minutes, until the sauce thickens slightly.
  5. Stir in the spinach a handful at a time until wilted, about 2 minutes. Add the lemon juice.
  6. Slide the salmon back into the sauce, skin side up. Cover and cook over low heat for 3 to 4 minutes, until the fish flakes and reads 63°C (145°F). Serve with the sauce spooned over.

Tips

  • Frozen spinach works if fresh is not at hand. Thaw 120 g (4 oz), squeeze it dry and stir it in with the cream.
  • For a dairy-free version, use full-fat coconut milk instead of cream and leave out the Parmesan.

Questions and answers

Can I use skinless salmon for this?

Yes. Sear it for 3 minutes per side instead, then return it to the sauce as written.

What can I serve with creamy salmon?

Rice, mashed potatoes, buttered pasta or crusty bread all mop up the sauce. A simple green salad cuts through the cream.

Can I make the sauce ahead of time?

The sauce keeps for 2 days in the fridge, but add the spinach and salmon fresh. Reheat gently so the cream does not split.
