Creamy mushroom sauce turns a plain chicken breast, steak, pork chop or bowl of pasta into a proper dinner. The key is to brown the mushrooms in a wide pan so they develop a deep, savory flavor instead of steaming. Shallot, garlic, thyme and a splash of wine build the base, and cream and a little mustard finish it. It takes about 30 minutes and reheats well.
Instructions
- Heat the oil and half of the butter in a large wide skillet over medium-high heat. Add the mushrooms in a single layer, in two batches if needed, and leave them undisturbed for 3 minutes.
- Stir and keep cooking for 5 to 6 minutes, until the mushrooms release their liquid and turn deep golden brown. Season with a pinch of salt and move them to a plate.
- Lower the heat to medium. Melt the remaining butter and cook the shallots for 2 minutes, then add the garlic and thyme for 30 seconds.
- Pour in the wine, scraping up the browned bits, and let it bubble until almost gone, about 2 minutes. Add the stock and simmer until reduced by half.
- Return the mushrooms to the pan. Stir in the cream and mustard and simmer gently for 3 to 4 minutes, until the sauce coats the back of a spoon.
- Season with the lemon juice, salt and pepper. Stir in the parsley and serve at once.
Tips
- Do not crowd the pan. Mushrooms packed together steam and turn grey instead of browning, so cook in batches if your pan is small.
- For a dairy-free sauce, use coconut milk or plant-based cream and olive oil in place of the dairy cream and butter, and add a splash of soy sauce for depth.
