Creamy Stovetop Oatmeal with Cinnamon Apples

A bowl of oatmeal cooked properly on the stove is warm, creamy and comforting, nothing like the gluey kind. Old-fashioned oats simmer in equal parts milk and water, with a pinch of salt that makes the flavor taste fuller. Spoon over apples that have been cooked in butter, brown sugar and cinnamon until they are soft and glazed, and breakfast is done in 20 minutes. The apples are good on yogurt and pancakes, too.

Instructions

  1. Bring the milk, water and salt to a gentle boil in a medium saucepan. Stir in the oats and reduce the heat to medium-low.
  2. Simmer for 5 to 7 minutes, stirring often, until thick and creamy. Stir in the vanilla, take the pan off the heat and cover for 2 minutes.
  3. Meanwhile, melt the butter in a small skillet over medium heat. Add the apple, brown sugar and cinnamon and cook for 5 to 6 minutes, stirring now and then, until the apple is tender and glazed.
  4. Spoon the oatmeal into bowls and top with the apples and their syrup. Scatter with the nuts and add a splash of cold milk if you like.

Tips

  • Toast the dry oats in the dry saucepan for 2 minutes before adding the liquid. It gives a nuttier flavor.
  • Cook the apples up to 4 days ahead and keep them in the fridge. Warm a spoonful to serve over oatmeal, yogurt or pancakes.

Questions and answers

What is the ratio of oats to liquid for oatmeal?

Use 1 part old-fashioned rolled oats to 2 parts liquid by volume. Add a little more liquid for a looser bowl or less for a thicker one.

How do I stop oatmeal boiling over?

Use a saucepan large enough for the liquid to bubble up, keep the heat at medium-low once the oats go in and stir often. Milk foams more than water, so watch it closely.

Can I make oatmeal with plant milk?

Yes. Oat, soy and almond milk all work. Oat milk gives the creamiest result, and unsweetened versions let you control the sweetness.
