Dak bokkeumtang, also called dakdoritang, is the spicy chicken stew many Korean families make for a weekend dinner. Bone-in chicken pieces simmer with potatoes, carrots and onion in a gochujang and chili flake sauce until the meat is tender and the sauce turns thick and glossy. The potatoes soak up the heat and become the best part. Serve with plenty of rice, and spoon the sauce over it.
Instructions
- Bring a large pot of water to a boil, add the chicken and boil for 3 minutes. Drain and rinse the chicken under warm water to remove impurities, which gives a cleaner, less oily sauce.
- Stir the gochujang, chili flakes, soy sauce, sugar, rice wine, garlic, ginger and pepper together in a bowl.
- Put the chicken, potatoes, carrots and onion in a wide heavy pot. Pour over the sauce and the water and stir to coat.
- Bring to a boil over high heat, then reduce to medium, cover and simmer for 20 minutes.
- Uncover and simmer for 15 to 20 minutes more, spooning the sauce over the chicken now and then, until the potatoes are tender, the chicken reaches 74°C (165°F) and the sauce is thick and glossy.
- Add the scallions and green chilies and simmer for 2 minutes. Serve hot with steamed rice.
Tips
- Cut the potatoes in large chunks. Small pieces dissolve into the sauce before the chicken is done.
- For a milder pot, use 1 tbsp of chili flakes. For extra substance, add 200 g (7 oz) of rice cakes in the last 8 minutes of cooking.
