Domashni kotlety are the home-style meat patties that Ukrainian families cook on ordinary weeknights. A mix of pork and beef is blended with grated onion, soaked bread and an egg, which keeps the patties soft and juicy, then shaped into ovals, crumbed and pan-fried. They are classic with mashed potatoes, buckwheat or pasta, and with pickled cucumbers on the side. They also taste good cold in a sandwich the next day.
Instructions
- Soak the bread in the milk for 5 minutes, then squeeze it out well and tear it into small pieces.
- Mix the meat, grated onion, bread, egg, garlic, dill, salt and pepper in a large bowl. Knead for 2 minutes, then lift the mixture and slap it back into the bowl a few times to firm it up. Chill for 20 minutes.
- With wet hands, shape the mixture into 8 oval patties about 2 cm (3/4 in) thick. Press each lightly into the breadcrumbs on both sides.
- Heat the oil in a large pan over medium heat. Fry the patties in batches for 5 minutes per side until deep golden.
- Lower the heat, cover the pan and cook for 5 minutes more, until the center reaches 71°C (160°F) and the juices run clear. Serve hot.
Tips
- Slap the meat mixture back into the bowl for a minute. It firms up the texture and helps the patties hold together.
- Keep your hands wet when shaping, and fry on medium heat so the center cooks through before the crust burns.
