Double Chocolate Muffins

Double chocolate muffins get their name from cocoa in the batter and chocolate chips folded through it. Oil and buttermilk keep the crumb soft for days, and brown sugar adds a little depth. The batter takes ten minutes to mix and the muffins bake in about 20. They are closer to a cupcake than a breakfast muffin, so serve them warm with coffee or pack one in a lunch box.

Instructions

  1. Heat the oven to 190°C (375°F). Line a 12-cup muffin pan with paper liners.
  2. Sift the flour, cocoa, baking powder, baking soda and salt into a large bowl, then whisk in both sugars, breaking up any lumps of brown sugar.
  3. In a jug, whisk the eggs, buttermilk, oil and vanilla until smooth.
  4. Pour the wet mixture into the dry and fold until just combined. Fold in the 150 g of chocolate chips. The batter will be thick.
  5. Divide the batter among the cups, filling them about three-quarters full. Press the extra chocolate chips onto the tops.
  6. Bake for 18 to 22 minutes, until the muffins spring back when pressed and a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for 5 minutes, then move to a rack. Serve warm for melted chocolate.

Tips

  • Add 1 teaspoon of instant coffee granules to the dry ingredients. It deepens the chocolate flavor without tasting of coffee.
  • Use natural cocoa powder, since the baking soda needs its acidity to work. Dutch-processed cocoa gives flatter, denser muffins.

Questions and answers

How do I keep chocolate muffins moist?

Do not overbake them, and use oil as in this recipe, which keeps the crumb softer than butter does. Take them out when a toothpick still shows a few moist crumbs.

Can I make double chocolate muffins without buttermilk?

Yes. Stir 1 tablespoon of lemon juice or white vinegar into 240 ml (1 cup) of milk, leave it for 5 minutes and use it in the same amount.

Why did all my chocolate chips sink?

Toss the chips in a spoonful of the flour mixture before folding them in, and keep the batter thick. Saving a few to press on the tops also helps.
