Peach cobbler is baked fruit under soft biscuit dough dropped on in spoonfuls, so the top looks cobbled: golden and craggy where it meets the air, tender and steamed underneath where it touches the fruit. It needs ripe, juicy peaches, which are worth waiting for, though thawed frozen slices work in winter. Serve it warm, with the juices spooned over, plus ice cream or cream if you like.
Instructions
- Heat the oven to 190°C (375°F). Toss the peaches with the 75 g sugar, cornstarch, lemon juice and cinnamon in a 23 cm (9 in) square or 2 liter (8-cup) baking dish.
- Bake the fruit on its own for 10 minutes, until the juices start to bubble. This gives the topping a head start.
- Meanwhile, mix the flour, 50 g sugar, baking powder and salt. Rub in the cold butter until the mixture looks like coarse crumbs. Stir in the cold milk with a fork until just combined into a soft, sticky dough.
- Drop spoonfuls of the dough over the hot fruit, leaving gaps so steam can escape. Sprinkle with the remaining tablespoon of sugar.
- Bake for 25 to 30 minutes, until the topping is deep golden and a toothpick in the biscuit comes out clean.
- Cool for 15 minutes, then serve warm, spooning the juices over the top, with ice cream or cream.
Tips
- To peel peaches easily, score a small X in the base of each, dunk in boiling water for 30 seconds, then move to ice water. The skins slip off.
- Handle the biscuit dough as little as possible. Lumps of butter and a sticky dough give the lightest topping.
Questions and answers
What is the difference between a cobbler and a crisp?
A cobbler has a soft biscuit or batter topping dropped over the fruit. A crisp or crumble has a crumbly topping of butter, sugar and flour, often with oats.
Can I use canned or frozen peaches?

Cover it and keep it in the fridge for up to 3 days. Reheat portions at 160°C (325°F) for 10 to 15 minutes to crisp the topping.
