A good strawberry sorbet tastes like the berry itself, only colder. It contains just fruit, sugar, water and a little lemon, so the quality of the strawberries decides everything. Sugar is not only for sweetness: it keeps the sorbet from freezing into a solid block of ice, which is why you should not cut it back too far. An ice cream maker gives the smoothest texture, but a stir-and-freeze method works too.
Instructions
- Stir the sugar and water in a small pan over medium heat until the sugar dissolves, about 2 minutes. Cool completely.
- Blend the strawberries with the syrup, lemon juice and salt until completely smooth. Press through a sieve if you want to remove the seeds.
- Chill the mixture for at least 1 hour, until very cold. A cold base churns faster and freezes smoother.
- Churn in an ice cream maker for 20 to 25 minutes, until thick like soft-serve.
- Transfer to a container, press cling film onto the surface and freeze for 2 to 3 hours, until firm enough to scoop.
- Let the sorbet stand for 5 to 10 minutes at room temperature before scooping.
Tips
- No ice cream maker? Pour the mixture into a shallow metal tray and freeze it, whisking vigorously every 45 minutes for 3 to 4 hours. The sorbet will be more granular but still very good.
- Taste the puree before freezing and make it slightly sweeter than you want. Cold dulls sweetness, so a mixture that tastes right at room temperature will taste less sweet when frozen.
Questions and answers
Why is my homemade sorbet icy?
There may not be enough sugar, or the mixture was not cold enough before churning. Keep the sugar as written and chill the base for a full hour.
Can I use frozen strawberries for sorbet?
Yes. Thaw them and blend with their juice. You may need a little more sugar, since frozen berries are often less sweet.
How long does strawberry sorbet last?
In a sealed container it keeps for 2 weeks, but it is smoothest in the first few days. Let it soften slightly before scooping.
