Edamame and Avocado Rice Bowl with Quick Pickles

This bowl is built from contrasts: warm rice, cool pickled cucumber and radish, creamy avocado and edamame that pop between the teeth. The quick pickles need only 15 minutes in vinegar and sugar, which is just enough to soften the cucumber lightly. A sauce of soy sauce, sesame oil, maple syrup and ginger ties everything together. It is a bright lunch or light dinner that needs little cooking.

Instructions

  1. Stir the vinegar, sugar and salt in a bowl until dissolved, add the cucumber and radish and toss. Leave for at least 15 minutes, stirring once or twice.
  2. Cook the rice according to the packet until tender, then leave it covered for 5 minutes and fluff with a fork.
  3. Cook the edamame in boiling water for 3 to 4 minutes, drain and cool them under cold water.
  4. Whisk the soy sauce, sesame oil, maple syrup, ginger, lime juice and chili sauce together to make the dressing.
  5. Divide the warm rice among four bowls. Arrange the edamame, drained pickles and sliced avocado on top.
  6. Drizzle with the sauce and scatter over the spring onions, sesame seeds and nori.

Tips

  • Slice the avocado only when you are ready to serve, and press a little lime juice on the slices to keep them green.
  • Add cubes of baked tofu, shredded carrot or sliced mango for more variety. The pickling liquid can be reused once for another batch of vegetables.
