Edible Cookie Dough Oat Bites

Cookie dough is a flavor most children love, and this version is safe to eat as it is. Oats ground into a coarse flour stand in for wheat flour, so there is no raw flour and no raw egg. Almond butter and maple syrup bring the caramel notes, and mini chocolate chips supply the cookie-dough crunch. Roll the bites small enough for a lunchbox and keep them cold until it is time to eat.

Instructions

  1. Grind the oats in a blender or food processor for about 30 seconds, until they look like a coarse, uneven flour. Tip them into a mixing bowl.
  2. Add the almond butter, maple syrup, vanilla and salt. Stir with a firm spatula until a thick dough forms.
  3. If the dough is crumbly, add the oat milk or water 1 teaspoon at a time. It should feel like soft cookie dough, not wet batter.
  4. Fold in the chocolate chips. Chill the bowl for 15 minutes so the dough firms up.
  5. Roll level tablespoons into balls about 3 cm (1 inch) wide. For a lunchbox, flatten them slightly into thick discs.
  6. Keep the bites in a lidded container in the fridge for up to 1 week.

Tips

  • Swap the almond butter for peanut or sunflower seed butter. Use sunflower seed butter, and chocolate chips made in a nut-free facility, for a nut-free school lunchbox.
  • Add a pinch of cinnamon or 1 tablespoon of finely chopped pecans for more depth and texture.

Questions and answers

Is edible cookie dough safe to eat?

This one is. It contains no raw egg and no raw wheat flour, only oats, nut butter, maple syrup and chocolate. Do not use a regular cookie dough in its place.

Can I bake these bites into cookies?

Not as written, because there is no egg or raising agent to help them spread and set. Freeze the bites and chop them into ice cream or yogurt instead.

Can I use quick oats?

Yes, quick oats grind faster and give a smoother dough. Use the same weight and add a little extra liquid if the mixture feels dry.
