Fit-Fit (Eritrean Torn Flatbread with Spiced Butter)

Fit-fit is how Eritrean cooks turn leftover flatbread into breakfast. Pieces of injera are torn up and tossed in a hot sauce of onion, tomato, berbere and spiced butter until every piece is coated, then served with a spoonful of plain yogurt to cool the heat. It is quick, filling and a good use for injera that is a day or two old. Eat it right away, with the right hand, straight from a shared plate.

Instructions

  1. Melt the butter in a wide pan over medium heat. Cook the onion for 5 minutes until soft, then add the garlic and chili and cook for 1 minute.
  2. Add the tomatoes and berbere and cook for 5 minutes, until the tomatoes break down and the sauce looks glossy.
  3. Pour in the water and salt and simmer for 2 minutes to make a loose sauce.
  4. Add the torn injera and toss for 1 to 2 minutes, until every piece is coated and just heated through. Do not cook longer or the injera turns mushy.
  5. Pile onto a shared plate and serve right away with yogurt on the side.

Tips

  • Very fresh injera can be too soft and falls apart in the sauce. Leave it out on the counter for a few hours to dry slightly first.
  • For a more filling version, serve it with a spoonful of leftover lentil or split pea stew on the side.
