Fresh Strawberry Syrup

Strawberry syrup turns up in milk, soda, pancakes and desserts, and a homemade jar tastes of real fruit instead of artificial red. Berries simmer briefly with sugar and a little lemon, then get strained into a clear, ruby-colored syrup. It is a good way to use a glut of ripe strawberries, and frozen berries work when fresh ones are out of season. Cook it only ten minutes to keep the fresh flavor.

Instructions

  1. Put the strawberries, sugar and water in a medium saucepan and stir. Leave for 10 minutes, until the sugar begins to draw out the juice.
  2. Heat over medium heat, stirring, until the sugar dissolves. Bring to a gentle simmer and cook for 10 minutes, mashing the berries with a spoon halfway through, until they are soft and the liquid is bright red.
  3. Take the pan off the heat and stir in the lemon juice and vanilla.
  4. Pour everything through a fine sieve set over a bowl. Let it drip for 10 minutes. Press gently on the berries for more juice, or leave them alone for a clearer syrup.
  5. Cool the syrup, then pour it into a clean jar or bottle, seal and refrigerate.

Tips

  • Save the strained berry pulp. Spoon it over yogurt or oatmeal, or swirl it into pancake batter. It keeps for 5 days in the fridge.
  • For a thicker syrup, simmer 3 to 4 minutes longer before straining. For a clearer syrup, do not press the berries in the sieve.
