Rote Grütze (North German Red Berry Pudding)

Rote Grütze is a red berry pudding from the north of Germany, served cold with vanilla sauce, cream or milk. Berries and cherries are cooked briefly in sweetened juice and thickened just enough to hold together, so the fruit stays whole and glossy. It is summer fruit in a bowl, and a good way to use frozen berries in winter.

Instructions

  1. Bring the juice, sugar and lemon juice to a simmer in a saucepan, stirring until the sugar dissolves.
  2. Add the cherries and currants and cook for 3 to 4 minutes, until the fruit is just soft but still holds its shape.
  3. Stir the cornstarch into the cold water until smooth. Pour it into the simmering fruit in a thin stream, stirring gently, and cook for 1 minute until the juice turns thick and clear.
  4. Take the pan off the heat. Fold in the strawberries, raspberries and vanilla, since they are delicate and cook in the residual heat.
  5. Pour into glass bowls and let cool. Chill for at least 3 hours.
  6. Serve cold with vanilla sauce, cream or milk.

Tips

  • Dust a teaspoon of sugar over the surface while it is still hot, or press cling film on it, to stop a skin from forming as it cools.
  • Use any mix of red fruit, and frozen berries work well. Keep soft fruit such as raspberries for the end so they do not break down.
