Oat crumble bars are a one-pan dessert: a buttery oat base and topping with a layer of jam in between. The same crumbly mixture does double duty, with two-thirds pressed into the pan as the base and the rest scattered over the top for crunch. Jam plus a handful of fresh berries gives bright flavor without too much sugar. The bars are sturdy, which makes them good for lunchboxes, picnics and afternoon tea.
Instructions
- Heat the oven to 180°C (350°F). Line a 23 cm (9 in) square pan with parchment paper, leaving an overhang on two sides.
- Stir the flour, oats, brown sugar, baking powder, cinnamon and salt in a large bowl. Rub in the cold butter with your fingertips until the mixture forms moist clumps.
- Press about two-thirds of the mixture firmly into the base of the pan. Bake for 12 minutes, until just set and lightly golden.
- Meanwhile, stir the jam, raspberries and lemon juice together, crushing a few of the berries.
- Spread the filling over the warm base, leaving a 1 cm (1/2 in) border. Scatter the remaining crumble mixture over the top and press it down lightly.
- Bake for 28 to 32 minutes, until the topping is golden and the jam is bubbling at the edges.
- Cool completely in the pan, then chill for 1 hour. Lift out and cut into 16 bars.
Tips
- Any thick jam works: blackberry, apricot, cherry or plum. If the jam is loose, simmer it for 5 minutes first so it does not soak the base.
- Add 60 g (1/2 cup) of chopped almonds to the crumble for extra crunch, and chill the bars well before cutting for neat edges.

Can I use frozen raspberries in oat crumble bars?
Yes. Do not thaw them. Toss them with 1 teaspoon of cornstarch before stirring them into the jam, so their juices do not soak the crust.
Why are my oat bars falling apart?
The base was not pressed firmly enough, or the bars were cut while warm. Press the base hard and chill the pan before cutting.

Keep them covered in the fridge for up to 5 days. They can be frozen for 3 months and thawed at room temperature.
