Frozen Yogurt Berry Bark

Frozen yogurt bark is the easy answer when children ask for something cold. Thick yogurt is spread onto a tray, dotted with berries and frozen until firm enough to snap. It tastes like a tangy frozen yogurt bar, and it packs protein and calcium. Make a tray on Sunday and break off pieces through the week, straight from the freezer.

Instructions

  1. Line a rimmed baking tray, about 25 x 35 cm (10 x 14 inches), with baking paper. Check that the tray fits flat in your freezer.
  2. Stir the yogurt, honey, vanilla and salt together until smooth.
  3. Spread the yogurt over the paper in an even layer about 1 cm (1/2 inch) thick.
  4. Scatter the berries over the top and press them in lightly so they stick. Sprinkle with the coconut.
  5. Freeze for 3 to 4 hours, until completely solid.
  6. Break or cut the bark into about 16 pieces. Serve at once, or bag the pieces and return them to the freezer.

Tips

  • Use thick yogurt. Thin yogurt freezes icy and hard, so strain a runny one for 30 minutes through a sieve lined with a clean cloth.
  • Swirl 2 tablespoons of fruit jam into the yogurt before spreading, or press in mini chocolate chips instead of berries for a sweeter version.

Questions and answers

How long does frozen yogurt bark keep?

Store it in a freezer bag with baking paper between the layers for up to 2 months. It tastes best in the first 2 weeks, before the berries lose their color.

Why is my yogurt bark icy or rock hard?

Low-fat or thin yogurt holds more water, which turns into ice crystals. Use thick, full-fat yogurt and let the pieces stand for 2 minutes before eating.

Can I make yogurt bark dairy-free?

Yes. Use thick coconut or soy yogurt and maple syrup in place of the honey. The bark will freeze slightly softer.
