Pyrizhky z Kapustoyu (Ukrainian Baked Cabbage Buns)

Pyrizhky are small stuffed buns that Ukrainian cooks bake for family visits, picnics and holidays. The dough is soft and lightly sweet, and the cabbage filling is slowly cooked with onion until it is dry enough not to leak, then mixed with chopped egg and dill. They can be baked or fried. They are as good cold as warm, which makes them a favorite for travel and packed lunches.

Instructions

  1. Whisk the yeast and sugar into the lukewarm milk and leave for 10 minutes until foamy. Add the flour, salt, egg and oil and knead for 8 minutes until smooth and soft. Cover and leave for 1 hour until doubled.
  2. Heat the filling oil in a large pan and cook the onion and carrot for 5 minutes. Add the cabbage and cook over medium heat for 20 minutes, stirring often, until soft and nearly dry.
  3. Season the cabbage with the salt and pepper and cool completely. Fold in the chopped eggs and dill.
  4. Divide the dough into 16 pieces of about 50 g (1.8 oz). Flatten each into a 9 cm (3.5 in) round, put 1 1/2 tablespoons of filling in the center and pinch the edges together firmly to seal.
  5. Set the buns seam-side down on parchment-lined trays, 3 cm (1 in) apart. Cover and leave for 25 minutes. Heat the oven to 190°C (375°F).
  6. Brush the buns with the egg yolk glaze and bake for 18 to 20 minutes, until deep golden. Serve warm or cold.

Tips

  • Cook the cabbage until it is soft and dry. Wet filling makes the dough soggy and the buns burst.
  • Pinch the edges firmly and place the buns seam-side down so they stay closed in the oven.
