Cabbage and potato soup grew out of cellar vegetables and thin budgets. Gently softened onion, plenty of garlic and a little smoked paprika give the broth real depth, while the cabbage turns silky after about 15 minutes. Mash a few of the potatoes into the pot and the soup thickens by itself. It is cheap, filling and easy to scale up for a crowd.
Instructions
- Heat the oil in a large pot over medium heat. Cook the onion for 6 minutes, stirring, until soft. Add the garlic, smoked paprika and thyme and cook for 1 minute, then stir in the tomato paste.
- Add the carrots and potatoes and stir for 2 minutes. Pour in the stock, add the bay leaves and salt, and bring to a boil.
- Reduce the heat to a steady simmer, cover and cook for 10 minutes.
- Stir in the cabbage, adding it in two batches if the pot is full. Simmer uncovered for 15 minutes, until the cabbage is silky and the potatoes are tender.
- Mash a handful of the potato cubes against the side of the pot to thicken the broth lightly. Remove the bay leaves, stir in the vinegar and the pepper, and taste for salt.
- Serve hot, topped with parsley and an extra grind of black pepper.
Tips
- For a creamier soup without adding dairy, blend 2 cups of the finished soup until smooth and stir it back into the pot.
- If the soup tastes flat, add a little more vinegar or lemon juice at the end. Smoked paprika also keeps well, so add an extra pinch to each bowl if you like a smokier broth.
Questions and answers
Can I make cabbage soup without potatoes?
Yes. Leave the potatoes out and stir in a drained 400 g (14 oz) can of white beans for the last 10 minutes, or add an extra carrot and a handful of rice.
How do I stop cabbage soup from smelling so strong?
Overcooked cabbage turns sulfurous. Keep the simmer gentle and stop cooking once the cabbage is silky, at about 15 minutes. Cooking it uncovered also lets some of the strong smell escape.
How long does cabbage and potato soup keep?
It keeps for 4 days in the fridge and freezes for up to 3 months. The potatoes soften a little after freezing, which only makes the soup thicker.
