Gingerbread flavor works in a mug as well as in a cookie. Molasses and brown sugar bring the dark, slightly bitter sweetness, while ginger, cinnamon and a touch of clove add the spice. Heating the spices in a little of the milk first helps them dissolve evenly. Children love it, and it is a good caffeine-free choice at holiday gatherings or on a snowy afternoon.
Instructions
- In a small saucepan, whisk the molasses, brown sugar, ginger, cinnamon and cloves with 60 ml (1/4 cup) of the milk over medium-low heat for 1 minute, until smooth and the sugar has dissolved.
- Pour in the remaining milk and heat for 4 to 5 minutes, stirring often, until steaming. Do not let it boil.
- Take the pan off the heat and whisk hard for 30 seconds to make the top foamy. A handheld milk frother also works well here.
- Stir in the vanilla. Pour into two mugs and top with whipped cream and a dusting of cinnamon, if you like.
Tips
- Dark molasses gives a gentler flavor than blackstrap, which can taste bitter. No molasses? Leave out both the molasses and the brown sugar and use 2 tablespoons of dark brown sugar instead.
- Stir the milk before each sip, because ground spices settle at the bottom of the mug.
Questions and answers
Can I make gingerbread milk with plant milk?
Yes. Oat and soy milk both work and keep the gingerbread flavor. Heat gently so they do not turn thick or split.
Can I make a big batch for a party?
Yes. Multiply the recipe and keep it warm in a slow cooker on low for up to 2 hours, whisking now and then. Add the vanilla just before serving.
Do I need to strain the spices out?
No. The spices are fine and settle at the bottom, so stir before sipping. For a smoother drink, pour the milk through a fine sieve.
