Green Spinach Pineapple Smoothie

Green smoothies have a reputation for tasting like lawn clippings, but this one does not. Pineapple and banana cover the spinach completely, and coconut water keeps the drink light instead of heavy. Blending the leaves with the liquid first is the trick for a smooth texture without stringy bits. It is a good way to eat a big handful of greens before the day gets going.

Instructions

  1. Pour the coconut water and lime juice into the blender, then add the spinach and push the leaves down into the liquid.
  2. Blend the spinach and liquid on high for 30 seconds, until the leaves are completely broken down and the liquid is bright green. This stops stringy bits from showing up later.
  3. Add the frozen pineapple, banana and ginger, if using.
  4. Blend on high for 45 to 60 seconds until thick and smooth. If the smoothie is too thick to move, add water 2 tablespoons at a time.
  5. Taste, and add the maple syrup if the pineapple was on the sour side.
  6. Pour into two glasses and drink right away, while it is cold and bright.

Tips

  • Make freezer packs: bag the spinach, pineapple and banana per serving, freeze flat, then tip a pack into the blender with the liquid.
  • Baby spinach has the mildest flavor. If you swap in kale, remove the stems and blend a little longer.

Questions and answers

Does a spinach smoothie taste like spinach?

Not much. Sweet pineapple and banana mask the leaves, and the lime adds brightness. Use baby spinach, not mature leaves, for the mildest result.

How long does a green smoothie keep?

Up to 24 hours in a sealed jar in the fridge, filled to the top to limit air. The color darkens a little and it will separate, so shake it before drinking.

Can I use water instead of coconut water?

Yes. The smoothie will be slightly less sweet and a bit less rounded in flavor, so you may want the maple syrup. Cold green tea also works well.

How long does it take to make Green Spinach Pineapple Smoothie?

About 5 min in total: 5 min of preparation and 0 min of cooking.
