Homemade Mocha

A mocha is a latte with chocolate in it, and it is the answer when you cannot decide between coffee and hot chocolate. Making it at home takes one small pan. The chocolate base is whisked from cocoa and sugar, so the drink tastes properly of chocolate and not just sweet. Pour the chocolate milk over hot coffee and the two mix as they meet. Use the strongest coffee you can brew.

Instructions

  1. Brew the coffee or espresso and keep it hot. Warm two mugs with a little hot water, then tip it out.
  2. In a small saucepan, whisk the cocoa, sugar and salt with 60 ml (1/4 cup) of the milk over low heat for 1 minute, until you have a smooth, glossy paste.
  3. Pour in the rest of the milk and heat for 4 minutes, stirring often, until steaming. Do not let it boil.
  4. Take the pan off the heat, stir in the vanilla and whisk hard for 20 seconds to make a foamy top.
  5. Divide the hot coffee between the two mugs, then pour the chocolate milk over it, stirring gently.
  6. Top with whipped cream if you like and serve right away.

Tips

  • For an iced mocha, let the chocolate milk cool, then pour it with the coffee over a tall glass of ice.
  • Swap the cocoa and sugar for 40 g (1.5 oz) of chopped dark chocolate for a richer, less sweet mocha. Whisk it in off the heat until melted.

Questions and answers

What is the difference between a mocha and a latte?

A latte is espresso with steamed milk. A mocha adds chocolate, so it tastes sweeter and richer. Some people call it a chocolate latte.

Can I make a mocha without an espresso machine?

Yes. Strong coffee from a moka pot, French press or drip machine works, or dissolve 2 teaspoons of instant coffee in 120 ml (1/2 cup) of hot water.

Can I make a mocha dairy-free?

Yes. Use oat or soy milk, which both foam well, and check that your cocoa and sugar are dairy-free. Heat gently and do not boil.
