Honey Mustard Sausage and Brussels Sprouts Skillet

Brussels sprouts brown well in a skillet, and their slight bitterness is a good match for rich sausage and a sweet-sharp glaze. Here sliced sausages brown first, then halved sprouts cook cut side down until deeply golden, and a little honey and whole-grain mustard coat everything. A splash of water steams the sprouts tender without making them soggy. Serve it straight from the pan with mashed potatoes, rice or crusty bread.

Instructions

  1. Slice the sausages into rounds 2 cm (3/4 inch) thick. Heat the oil in a large skillet over medium-high heat and cook the sausage rounds for 5 to 6 minutes, turning, until browned on both sides. Move them to a plate.
  2. Add the sprouts cut side down to the pan with the salt and pepper. Cook for 5 minutes without stirring, until the cut sides are deep golden.
  3. Add the onion and cook, stirring, for 3 minutes. Pour in the water, cover and steam for 3 to 4 minutes until the sprouts are tender when pierced with a knife.
  4. Stir the honey, both mustards and the vinegar together in a small bowl.
  5. Return the sausages to the pan with the garlic and the glaze. Cook, stirring, for 2 to 3 minutes until the glaze coats everything and the sausages reach 74°C (165°F). Taste for salt and serve from the pan.

Tips

  • Cut the sprouts to a similar size. If they are large, quarter them so they cook through.
  • Precooked smoked sausage works too. Slice and brown it for just 3 minutes and skip the temperature check.

Questions and answers

How do I keep Brussels sprouts from tasting bitter?

Brown them well and balance them with something sweet and acidic, as the honey and vinegar do here. Avoid overcooking, which gives them a sulfurous taste.

Can I use frozen Brussels sprouts?

They work but will not brown as well. Cook them from frozen, uncovered, and skip the water.

What can I serve with this skillet?

Mashed potatoes, rice, polenta or crusty bread all work. A simple green salad is enough.
