Sausage Rolls (Flaky Pastry with Herby Pork Filling)

A good sausage roll has flaky, golden pastry and a juicy, well-seasoned filling, not a dry grey core. Making your own takes about 20 minutes of work using ready-made puff pastry, and the filling is just sausage meat boosted with onion, sage, mustard and a few breadcrumbs. They are the first thing to disappear at a party, they travel well on picnics and they freeze unbaked for weeks.

Instructions

  1. Heat the oven to 200°C (400°F). Line two baking sheets with baking paper.
  2. Put the sausage meat, onion, breadcrumbs, sage, parsley, mustard, pepper and nutmeg in a bowl and mix with your hands until just combined.
  3. Unroll the pastry on a lightly floured surface and cut it in half lengthwise to make two long strips. Divide the filling in two and shape each half into a long sausage the length of a strip.
  4. Lay a filling roll along the middle of each strip. Brush one long edge with the egg wash, fold the other side over the filling and press the edges together with a fork to seal.
  5. Cut each long roll into 6 pieces. Set them seam side down on the baking sheets, brush with egg wash and sprinkle with seeds. Snip two small slits in the top of each.
  6. Bake for 25 to 30 minutes until deep golden and the filling reaches 71°C (160°F). Cool on a rack for 5 minutes, and serve warm or cold.

Tips

  • Keep the pastry cold. If it softens while you work, chill the shaped rolls for 15 minutes before baking so the layers puff up.
  • To freeze, set the glazed, unbaked rolls on a tray until solid, then bag them. Bake from frozen at 200°C (400°F) for 35 minutes.

Questions and answers

Can I make sausage rolls ahead of time?

Yes. Freeze the unbaked rolls for up to 2 months and bake them from frozen. Baked rolls keep for 3 days in the fridge and reheat well in the oven.

Why are my sausage rolls soggy underneath?

Soggy bases usually come from an oven that is not hot enough or a very fatty filling. Preheat the baking sheet and bake the rolls on a lower shelf.

What meat is used in sausage rolls?

Traditionally it is seasoned pork sausage meat. Chicken, turkey or a vegetarian mince also work well in the same method.
