The full English breakfast is the big cooked plate that Britain serves at weekends, in cafes and in hotels: sausages, bacon, eggs, tomato, mushrooms, baked beans and toast, with black pudding for those who like it. The skill is not in any single item but in timing, so everything reaches the plate hot together. Start with the sausages, keep finished items warm in a low oven, and fry the eggs last.
Instructions
- Heat the oven to 120°C (250°F) and put the plates and a baking tray inside to warm. This keeps the first items hot while you cook the rest.
- Heat 1 tablespoon of the oil in a large heavy pan over medium-low heat. Fry the sausages for 15 to 20 minutes, turning often, until browned and cooked through to 71°C (160°F). Move them to the tray in the oven.
- In the same pan, fry the black pudding, if using, for 2 minutes per side. Then fry the bacon for 2 to 3 minutes per side until crisp at the edges. Keep both warm in the oven.
- Set the tomato halves cut side down in the pan with a pinch of salt and fry for 3 minutes until browned. Turn them and cook for 2 minutes more, then move them to the tray.
- Melt the 30 g of butter in the pan, add the mushrooms and fry over medium-high heat for 5 minutes until golden. Season with salt and pepper and keep warm.
- Warm the beans in a small pan over low heat for 5 minutes, stirring now and then. Make the toast.
- Heat the remaining oil in a clean non-stick pan over medium heat and fry the eggs for 2 to 3 minutes, spooning hot oil over the whites, until the whites are set.
- Divide everything between the warm plates and serve at once with buttered toast and brown sauce or ketchup.
Tips
- Cook in the right order: sausages first, since they take longest, and eggs last. A warm oven for the finished items keeps everything hot.
- For a lighter version, bake the sausages, bacon and tomatoes on trays at 200°C (400°F) for 20 to 25 minutes, then fry only the eggs and mushrooms.
