Sausages, potatoes and green beans are a combination that works because each part brings something: the sausages give fat and savor, the potatoes soak it up and the beans add freshness and color. Everything cooks in a single skillet, with a short steam to cook the potatoes through and a final blast of heat to brown them. A spoonful of whole-grain mustard stirred in at the end makes a quick sauce. Use any fresh pork or chicken sausages you like.
Instructions
- Heat the oil in a large deep skillet with a lid over medium heat. Brown the sausages for 6 to 8 minutes, turning, until golden on all sides. Move them to a plate. They are not cooked through yet.
- Add the potatoes cut side down to the fat in the pan, sprinkle with the salt and pepper and cook for 6 minutes without stirring, until golden underneath.
- Add the onion and thyme, stir, and cook for 3 minutes.
- Pour in the stock, return the sausages, cover and cook over medium-low heat for 10 minutes.
- Add the green beans and garlic, cover and cook for 6 to 8 minutes more, until the potatoes are tender, the beans are tender but still crisp and the sausages reach 71°C (160°F) for pork or 74°C (165°F) for chicken.
- Uncover, stir in the mustard and vinegar and cook for 2 minutes until the liquid becomes a light glaze. Serve from the pan.
Tips
- Smoked sausages also work. They are already cooked, so brown them for just 3 to 4 minutes and add them back with the beans.
- Broccoli florets or sliced zucchini can replace the green beans. Add them for the last 5 minutes.
Questions and answers
How do I know when fresh sausages are cooked?
Fresh pork sausages should reach 71°C (160°F) in the center, with no pink and clear juices. Chicken sausages need 74°C (165°F).
Can I make this with sweet potatoes?
Yes. Cut them into 2 cm (3/4 inch) cubes. They cook faster, so shorten the covered time by about 4 minutes.
Can I reheat the leftovers?
Yes. They keep for 3 days in the fridge. Reheat them in a skillet with a splash of water so the potatoes do not dry out.
