Cobb Salad

The Cobb salad is an American classic built for looking at: a bed of chopped lettuce topped with neat rows of chicken, bacon, hard-boiled egg, avocado, tomato and blue cheese. Everything is chopped small so that every forkful has a bit of each. A simple red wine vinaigrette keeps the richness in check. Cook the chicken, bacon and eggs ahead and the salad comes together in minutes, which makes it a good lunch for meal prep.

Instructions

  1. Put the eggs in a pot, cover with cold water and bring to a boil. Take the pot off the heat, cover and leave for 10 minutes, then cool the eggs in ice water. Peel and chop.
  2. Season the chicken with salt and pepper. Cook it in the olive oil over medium-high heat for 6 to 7 minutes per side, until it reads 74°C (165°F). Rest for 5 minutes, then dice.
  3. Cook the bacon in a skillet over medium heat for about 8 minutes until crisp. Drain on paper towels and crumble.
  4. Shake the vinaigrette ingredients together in a jar until blended.
  5. Spread the romaine over a large platter. Arrange the chicken, bacon, egg, avocado, tomato and blue cheese in neat rows on top and scatter with chives.
  6. Toss with the vinaigrette at the table and serve right away.

Tips

  • Toss the diced avocado with a squeeze of lemon and add it just before serving so it does not brown.
  • Cook the chicken, bacon and eggs up to 2 days ahead and keep them separate. The vinaigrette keeps for a week in the fridge.
