Roasting turns even slightly underripe peaches into something jammy and fragrant. Halved fruit goes into a hot oven brushed with honey, butter and vanilla, where the edges caramelize and the juices pool into a syrup. Spoon it warm over cold, thick yogurt and finish with chopped pistachios for crunch. It is a good way to use up a bowl of summer fruit, and plums, apricots and nectarines work just as well.
Instructions
- Heat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Lay the peach halves cut side up on the sheet. Stir the melted butter, 1 tbsp honey, vanilla and salt together and brush over the cut sides. Tuck the thyme sprigs around the fruit.
- Roast for 18 to 22 minutes, until the edges are browned and the flesh is tender and juicy. Firmer peaches need the full time.
- While the fruit roasts, stir the remaining honey and the cinnamon into the yogurt.
- Divide the yogurt among four bowls. Slice the warm peaches, arrange them on top and spoon over the juices from the pan. Scatter with the pistachios.
Tips
- Use fruit that is ripe but still firm. Very soft peaches collapse into mush, while rock-hard ones stay chalky and do not caramelize.
- Roast a double batch. The fruit keeps for 4 days in the fridge and is good on oatmeal, pancakes and ice cream.
Questions and answers
Do I need to peel the peaches?
No. The skins soften in the oven and add color and a little tartness. If you prefer, they slip off easily after roasting.
Can I use canned or frozen peaches?
Yes. Thaw frozen slices and pat them dry, or drain canned peaches well. Roast for 12 to 15 minutes, since they release more liquid and brown less than fresh fruit.
What can I use instead of honey?
Maple syrup works in the same amount. For a vegan bowl, use maple syrup, swap the butter for a little oil and serve the fruit over coconut or soy yogurt.
