Loaded Baked Potatoes with Chili Beans

A baked potato is already a good meal base, and a pan of smoky kidney bean chili turns it into dinner. The potatoes bake until the skins crackle and the insides turn fluffy, while the beans simmer in a tomato sauce with chili powder, cumin and paprika. Add a spoonful of cool soy yogurt and spring onion on top. Everything can be made ahead and reheated, which makes this a handy lunch box food.

Instructions

  1. Heat the oven to 210°C (410°F). Scrub the potatoes, prick them all over with a fork, rub with the oil and salt and place them directly on the oven rack.
  2. Bake for 60 to 70 minutes, until the skins are crisp and a knife slides easily into the center.
  3. While the potatoes bake, heat the oil in a pan and cook the onion and pepper for 7 minutes. Add the garlic, chili powder, cumin, paprika and tomato paste and cook for 1 minute.
  4. Add the beans, tomatoes, water and salt. Simmer gently for 15 to 20 minutes, mashing a few of the beans, until the sauce is thick.
  5. Cut a deep cross in the top of each hot potato and squeeze the ends to open it up. Fluff the flesh lightly with a fork.
  6. Pile the chili beans into the potatoes and finish with a spoonful of yogurt and spring onions.

Tips

  • For the crispest skins, bake the potatoes straight on the rack with no foil. Foil traps steam and makes the skins soft.
  • Short on time? Microwave the potatoes for 8 minutes, then crisp them in the oven for 15 minutes at 220°C (425°F).
