Lokše are thin, soft potato flatbreads cooked on a dry griddle, a favorite of Slovak home kitchens. The dough is just mashed potato, flour and salt, rolled paper-thin and cooked for a minute on each side. Brush them with melted butter and roll them around ground poppy seeds and sugar or plum jam for a sweet treat, or serve them with roast duck or goose, as many families do.
Instructions
- Boil the potatoes in lightly salted water for 20 minutes, until very tender. Drain, let them steam dry for 5 minutes and mash until completely smooth. Cool to lukewarm.
- Add the flour and salt and work them into the mash to a soft, smooth dough, kneading for only 1 or 2 minutes. Divide into 8 equal pieces, about 100 g (3 1/2 oz) each.
- On a well-floured surface, roll each piece into a very thin round about 24 cm (9 1/2 in) wide, lifting and dusting it with flour as you go.
- Heat a heavy, dry pan or griddle over medium-high heat. Cook each lokše for 1 to 1 1/2 minutes per side, until dry with light brown spots.
- Stack the cooked lokše under a clean cloth so they stay soft while you cook the rest.
- Brush each lokše with melted butter, sprinkle with the poppy seed sugar or spread with plum jam, roll it up and serve warm.
Tips
- Dry the potatoes well and mash them smooth. Lumps tear the dough, and extra moisture makes it sticky and hard to roll.
- Keep the pan dry, with no oil, and hot enough to leave brown spots. If it is too cool the lokše dry out before they color.
Questions and answers
What do you serve lokše with?
Sweet versions use melted butter with poppy seeds and sugar, plum jam or sweet quark. Savory versions are served alongside roast goose or duck.
Can I make lokše ahead of time?
Yes. Cool the cooked lokše, stack them with baking paper in between and refrigerate for 3 days. Warm them in a dry pan for 30 seconds per side before filling.
Can I use leftover mashed potatoes?
Only if they are plain, with no milk, butter or cream added. Enriched mash is too soft and needs more flour, which makes the lokše heavier.
