Muriwo une dovi means greens with peanut butter, and it is one of the most common relishes served with sadza in Zimbabwe. Leafy greens such as collards, kale, rape or pumpkin leaves are cooked down with onion and tomato, then finished with a few spoonfuls of peanut butter that turn the sauce creamy and rich. It costs little, feeds a crowd, is naturally vegan and is ready in about 45 minutes.
Instructions
- Wash the greens well. Stack the leaves, roll them up tightly and slice them very thinly, about 5 mm (1/4 in) wide.
- Heat the oil in a large pot over medium heat. Cook the onion for 5 minutes, until soft and translucent, then add the tomatoes and cook for 5 minutes more, until they break down into a thick sauce.
- Add the greens in batches, letting each handful wilt before adding the next. Stir in the salt and 125 ml (1/2 cup) of water, cover and cook for 12 to 15 minutes, until the greens are tender.
- Whisk the peanut butter with the hot water until smooth. Stir it into the greens and simmer uncovered for 5 minutes, until the sauce is thick and coats the leaves.
- Taste and adjust the salt. Serve hot with sadza.
Tips
- Collards and kale need 12 to 15 minutes, so slice them thinly. Spinach and Swiss chard cook in 5 to 7 minutes, so shorten the simmer to match.
- Natural peanut butter, made from peanuts and salt only, tastes best. Thin it with hot water before adding it so that it does not clump in the pot.
