Mushroom and Beef Blended Burgers

Blending chopped mushrooms into ground beef is a simple way to stretch the meat, cut some fat and keep the burgers moist. The mushrooms are cooked first to drive off their water, then cooled and mixed in, so the patties brown instead of steaming. The flavor is deeply savory, and most people cannot pick out the mushrooms. It suits kids, and it gives you a burger with about a third less beef than the standard recipe.

Instructions

  1. Heat 1 tbsp of the oil in a large skillet over medium-high heat. Cook the mushrooms for 8 to 10 minutes, stirring often, until all their liquid has evaporated and they begin to brown. Add the garlic for the last 30 seconds.
  2. Stir in the soy sauce and cook for 1 minute until absorbed. Spread the mushrooms on a plate and let them cool for 10 minutes.
  3. Mix the cooled mushrooms with the beef, paprika, salt and pepper, using your hands, just until combined.
  4. Shape the mixture into 4 patties, each about 10 cm (4 inches) wide and 2 cm (3/4 inch) thick, with a shallow dimple in the middle. Chill for 10 minutes.
  5. Heat the remaining 1 tbsp oil in the skillet over medium-high heat. Cook the patties for 4 to 5 minutes per side, until browned and a thermometer reads 71°C (160°F). Add the cheese in the last minute if using.
  6. Rest the burgers for 2 minutes, then serve in toasted buns with your chosen toppings.

Tips

  • Chop the mushrooms very fine, by hand or with short pulses in a food processor, so they blend into the meat.
  • The same mixture works for meatballs, meatloaf and pasta sauce. The mushrooms keep the texture soft in lean meat.
