Mushroom and Goat Cheese Frittata

A frittata is the most forgiving egg dish there is. Vegetables are cooked first, eggs are poured over, and the oven sets everything into a thick, tender cake that you slice like a pie. Mushrooms browned in olive oil, thyme and soft goat cheese make a savory, slightly tangy combination. Serve wedges warm for brunch, or pack leftovers cold for lunch the next day. It also takes well to whatever vegetables you have.

Instructions

  1. Heat the oven to 190°C (375°F). Whisk the eggs, milk, salt and pepper until smooth and set aside.
  2. Heat the olive oil in a 25 cm (10 inch) ovenproof nonstick skillet over medium-high heat. Add the mushrooms and cook for 6 to 7 minutes, stirring now and then, until browned and dry.
  3. Add the onion and cook for 3 minutes, until soft. Stir in the garlic and thyme and cook for 30 seconds.
  4. Reduce the heat to medium-low and spread the vegetables evenly. Pour in the eggs and scatter the chèvre on top. Cook without stirring for 2 to 3 minutes, until the edges begin to set.
  5. Transfer the skillet to the oven and bake for 10 to 12 minutes, until the center is just set and the top is lightly golden.
  6. Rest for 5 minutes. Loosen the edges, sprinkle with parsley and cut into wedges.

Tips

  • A 25 cm (10 inch) pan gives a frittata about 2.5 cm (1 inch) thick. A larger pan makes a thin, dry frittata that needs about 5 minutes less in the oven.
  • Use up leftovers such as roasted vegetables, cooked potatoes, spinach or herbs. Keep the filling to 300 to 400 g (10 to 14 oz) so the eggs can still bind it.

Questions and answers

What is the difference between a frittata and an omelet?

An omelet is cooked quickly and folded around its filling. A frittata mixes the filling into the eggs and finishes in the oven, then is cut into wedges. It is thicker and good warm or at room temperature.

Can I make a frittata ahead of time?

Yes. Bake it, cool it and refrigerate for up to 4 days. Serve it cold, at room temperature, or warm in a 160°C (325°F) oven for 10 minutes.

Why is my frittata rubbery?

It was probably baked too long or at too high a heat. Take it out as soon as the center is set and no liquid egg remains (71°C/160°F in the middle). It keeps setting while it rests.

How long does it take to make Mushroom and Goat Cheese Frittata?

About 32 min in total: 10 min of preparation and 22 min of cooking.
