No-Churn Mango Ice Cream

Mango makes one of the easiest and most fragrant no-churn ice creams, because ripe mango puree is already smooth, sweet and thick. Folded into whipped cream with sweetened condensed milk, it freezes into a soft, golden scoop with no ice cream maker. A squeeze of lime keeps the sweetness in check and brightens the fruit. Use very ripe, fragrant mangoes, or thawed frozen mango chunks when fresh ones are out of season.

Instructions

  1. Puree the mango with the lime juice in a blender until completely smooth. For an extra-smooth ice cream, press the puree through a sieve.
  2. Stir the condensed milk and salt into the puree.
  3. Whip the cold cream until it holds stiff peaks.
  4. Fold one-third of the cream into the mango mixture to loosen it, then gently fold in the rest until no streaks remain.
  5. Pour into a 1.5 liter (6-cup) freezer-safe container, press cling film onto the surface and freeze for at least 6 hours or overnight.
  6. Let the ice cream stand at room temperature for 5 to 10 minutes before scooping.

Tips

  • If your mangoes are fibrous, sieve the puree. If you use canned sweetened mango pulp instead of fresh fruit, reduce the condensed milk to 300 g.
  • Fold, do not stir, when combining the mango with the cream. Stirring knocks out the air and gives a denser, icier result.
