Obleas are paper-thin round wafers, and in Colombian parks and plazas vendors spread them with arequipe, a thick milk caramel, then add blackberry jam, grated cheese or both. The sweet and salty combination sounds odd until you try it. The wafer shatters, the caramel is sticky and the cheese adds a savory edge. Children love them, and they take five minutes to assemble at home.
Instructions
- Lay 4 wafers on a board. Spread each with about 2 tablespoons of arequipe, leaving a border of 1 cm (1/2 in) so it does not ooze out.
- Spoon 1 tablespoon of jam over the arequipe and scatter the grated cheese on top.
- Cover with the remaining wafers and press down gently.
- Eat right away, before the wafers soften. Cut each sandwich in half for sharing.
Tips
- Obleas are sold in Latin American shops. If you cannot find them, use thin, crisp wafer sheets or two thin plain wafer cookies per sandwich.
- For homemade arequipe, pour a can (400 g / 14 oz) of sweetened condensed milk into a heatproof bowl, cover with foil, set it over simmering water and cook for 2 hours, stirring now and then, until thick and golden.
Questions and answers
What are obleas made of?
Obleas are baked from a thin batter of wheat flour and water between hot plates. They are crisp and nearly flavorless, which makes them a good base for sweet fillings.
Do I have to add the cheese?
No. Many people make them with just arequipe and jam. The cheese adds a salty contrast, so it is worth trying once.
Can I make obleas ahead of time?
Assemble them just before eating, because the wafers soften within about 15 minutes. If you must prepare ahead, keep the wafers, caramel and cheese separate.
