Papas Chorreadas (Colombian Potatoes in Cheese and Tomato Sauce)

Papas chorreadas, or dripping potatoes, are small boiled potatoes covered with a warm sauce of tomato, scallion, cream and melted cheese. Colombians serve them next to grilled beef, roast chicken or a plate of fried fish, and they are common at barbecues and on restaurant menus in the Andes. The sauce starts with the same sofrito used in many Colombian dishes, so it comes together in minutes while the potatoes boil.

Instructions

  1. Put the potatoes in a pot, cover with cold water, add 1 tablespoon salt and bring to a boil. Cook for 15 to 20 minutes, until a knife slides in easily. Drain and keep warm.
  2. Meanwhile, heat the oil in a skillet over medium heat and cook the scallions for 2 minutes. Add the tomatoes, cumin, 1/2 teaspoon salt and the pepper, and cook for 8 minutes until thick and jammy.
  3. Lower the heat, stir in the cream and simmer for 2 minutes. Add the cheese in two handfuls, stirring until melted and smooth, about 2 minutes. Do not let it boil.
  4. Put the potatoes on a platter, pour the hot sauce over them and serve right away.

Tips

  • Use potatoes of a similar size so they cook at the same rate. Larger ones can be halved or quartered.
  • For a lighter sauce, replace the cream with milk and use a little less cheese. A pinch of sugar helps if the tomatoes are sharp.

Questions and answers

What do you serve with papas chorreadas?

Grilled meats, roast chicken, fried fish or sausages. In Colombia they often share a plate with grilled beef and a simple salad.

Can I make the sauce ahead of time?

Make the tomato base up to 3 days ahead. Reheat it, then add the cream and cheese just before serving, since melted cheese turns stringy and heavy when reheated.

Which potatoes work best?

Small waxy potatoes such as baby yellow or red hold their shape and stay creamy. Floury potatoes break down and make the dish look messy.

How long does it take to make Papas Chorreadas (Colombian Potatoes in Cheese and Tomato Sauce)?

About 40 min in total: 10 min of preparation and 30 min of cooking.
