Parené Buchty (Slovak Steamed Plum Jam Buns)

Parené buchty are soft yeast buns that are steamed instead of baked, which gives them a tender, airy crumb. Each one hides a spoonful of thick plum jam in the center. They are served warm, brushed with melted butter and sprinkled with ground poppy seeds mixed with sugar. Serve them as a dessert or as a sweet main meal on a cold day.

Instructions

  1. Mix the flour, yeast, sugar and salt in a large bowl. Add the milk, egg and melted butter and knead for 8 to 10 minutes, until the dough is smooth and soft. Cover and let it rise in a warm place for 1 hour, until doubled.
  2. Divide the dough into 12 pieces of about 70 g (2 1/2 oz). Flatten each into a 9 cm (3 1/2 in) disc and spoon 1 tablespoon of jam into the center. Gather the edges over the jam, pinch to seal and roll into a smooth ball with the seam underneath.
  3. Place the buns on a floured tray, 3 cm (1 1/4 in) apart, cover with a cloth and let them rise for 20 minutes.
  4. Bring 3 cm (1 1/4 in) of water to a simmer in a wide pot. Line a steamer basket or a metal colander with baking paper pierced with a few holes, and set it over the pot without touching the water.
  5. Steam the buns in 2 batches, seam side down, with a tight lid on, for 15 minutes per batch. Do not lift the lid while they steam, or they may collapse.
  6. Brush the hot buns with melted butter, sprinkle with the poppy seed sugar and serve at once.

Tips

  • Keep the lid on for the whole 15 minutes of steaming. Escaping steam makes the buns sink and turn dense.
  • Wrap the pot lid in a clean tea towel so condensation cannot drip onto the buns and leave wet spots.

Questions and answers

Can I fill the buchty with something other than plum jam?

Yes. Sweet quark with raisins, apricot jam or ground poppy seeds with sugar all work. Keep the filling thick so it does not leak during steaming.

Can I make them without a steamer?

Yes. Use a metal colander lined with baking paper, set over a wide pot of simmering water, with a tight lid on top. Make sure the colander does not touch the water.

How do I reheat parené buchty?

Steam them again for 4 to 5 minutes, or microwave them for 20 to 30 seconds under a damp paper towel. They are best eaten fresh, within a day.
