Peanut Butter Apple Sandwiches

Slice an apple into rounds, scoop out the core, and you have a sturdy base for a quick sandwich with no bread. A thin layer of peanut butter holds the toppings in place, and the apple keeps everything crisp and juicy. Kids like to build their own with raisins, chocolate chips or chopped nuts. A quick dip in lemon water keeps the slices pale if you pack them for lunch.

Instructions

  1. Stir the lemon juice into 250 ml (1 cup) of cold water in a wide bowl. This keeps the apple slices from browning.
  2. Wash the apples. Slice each one crosswise into 5 rounds about 1 cm (1/2 inch) thick, discarding the stem and base ends.
  3. Use a small round cutter or the tip of a paring knife to remove the star-shaped core from the center of each round.
  4. Drop the rounds into the lemon water for 2 minutes, then lift them out and pat very dry. Wet slices make the filling slide.
  5. Spread about 2 teaspoons of peanut butter on half the rounds. Sprinkle with the chocolate chips, raisins and peanuts.
  6. Top each with a plain round and press down gently. Serve right away, or wrap each pair in baking paper for a lunchbox.

Tips

  • Wrap the pressed sandwiches tightly in baking paper and add a cold pack. Slices dipped in lemon water stay pale until lunchtime.
  • Almond butter or sunflower seed butter works in place of peanut butter. For a nut-free lunchbox, use sunflower seed butter and leave out the chopped peanuts or swap in sunflower seeds.

Questions and answers

How do I keep apple slices from turning brown?

A 2-minute dip in water with a splash of lemon juice slows browning for several hours. Pat the slices dry afterward so the filling does not slide.

Which apples work best for apple sandwiches?
