Gutap (Turkmen Stuffed Flatbread)

Gutap are thin stuffed flatbreads that Turkmen cooks make in minutes on a hot pan. The dough is rolled very thin, filled with a mix of chopped spinach, herbs and onion, and folded into a half-moon. They are blistered on a hot dry skillet and brushed with oil. Pumpkin is a common alternative filling. Serve hot, with tea or a fresh salad.

Instructions

  1. Mix the flour, salt, water and oil and knead for 8 minutes into a smooth dough. Cover and rest for 30 minutes.
  2. Toss the spinach with 1/2 teaspoon of the salt and leave for 10 minutes. Squeeze out all the liquid by hand, then mix with the onion, spring onions, herbs, remaining salt and pepper.
  3. Divide the dough into 8 balls. Roll each into a very thin round about 25 cm (10 in) wide.
  4. Spread a heaped 4 tablespoons of filling over one half of a round, leaving a 1 cm (1/2 in) border. Fold the other half over and press the edge firmly shut with a fork.
  5. Heat a heavy skillet or griddle over medium-high heat. Cook each gutap for 2 to 3 minutes per side, until golden with brown blisters.
  6. Brush with oil, cut in wedges if you like, and serve hot.

Tips

  • Squeeze the spinach really dry, or the steam will burst the thin dough. Frozen spinach works if you thaw it and squeeze it well.
  • For a pumpkin version, use 400 g of coarsely grated pumpkin with 1 teaspoon of sugar, and cook slightly longer on low heat.
