Pear and Ginger Crumble

Pears give a softer, more perfumed crumble than apples, and fresh ginger adds a warm bite that cuts through the sweetness. The pears are cut into chunks so that they soften without turning to mush, and the topping is a mix of flour, oats and hazelnuts for extra crunch. Choose pears that are ripe but still firm. This is an easy dessert for autumn and winter evenings, best with warm custard.

Instructions

  1. Heat the oven to 190°C (375°F). In a 2 liter (8-cup) baking dish, toss the pears with the 40 g brown sugar, lemon juice, cornstarch, fresh ginger, cinnamon and crystallized ginger, if using.
  2. For the crumble, stir the flour, oats, 70 g brown sugar, ground ginger and salt. Rub in the cold butter with your fingertips until the mixture forms coarse crumbs. Stir in the hazelnuts.
  3. Scatter the crumble over the pears in an even layer.
  4. Bake for 35 to 40 minutes, until the topping is golden brown and the pears are tender when pierced with a knife.
  5. Rest for 10 minutes and serve warm with cream, custard or yogurt.

Tips

  • Use pears that are ripe but still firm. Soft, very ripe pears collapse into a puree in the oven.
  • Almonds or pecans work in place of hazelnuts. Toasting the nuts first makes the topping taste richer.

Questions and answers

Do I need to peel pears for crumble?

Peeling gives a smoother texture, because pear skin can turn tough once baked. Thin-skinned pears can be left unpeeled if you prefer.

Can I use canned pears?

Yes. Drain them very well, skip the sugar in the filling and shorten the baking time to about 30 minutes, until the topping is golden.

Can I make this crumble gluten-free?

Yes. Replace the flour with a 1:1 gluten-free flour blend and use oats labeled gluten-free. The topping will be slightly more crumbly.
