Pressure Cooker Applesauce

Homemade applesauce is much better than the jarred kind, and it is a good way to use a bag of apples that are getting soft. A pressure cooker softens the fruit in five minutes with very little water, so the flavor stays concentrated. Mix sweet and tart apples for balance, leave the skins on a few red ones for a pink color, and add sugar only if you need it. Eat it warm, spoon it onto porridge or serve it with pork.

Instructions

  1. Cut the apples into chunks about 3 cm (1 1/4 inches) wide. Peel them for a smooth, pale sauce or leave some skin on for a rosy one.
  2. Put the apples, water, lemon juice and cinnamon in the pressure cooker pot. Do not fill the pot more than two-thirds full.
  3. Close and lock the lid, set the vent to sealing and cook at high pressure for 5 minutes.
  4. Let the pressure release naturally for 10 minutes, then release the rest. The apples should be very soft and falling apart.
  5. Remove the cinnamon stick. Mash with a potato masher for a chunky sauce, or blend with an immersion blender for a smooth one.
  6. Taste and stir in sugar or maple syrup only if needed. Serve warm, or cool and store.

Tips

  • If the sauce is too thin, simmer it on the sauté setting for 5 minutes with the lid off to evaporate some liquid.
  • Add a pinch of nutmeg, a splash of vanilla or a handful of berries for variety.
