Curried sausages are retro Australian home cooking at its most comforting. Browned sausages simmer in a mild, slightly sweet curry sauce thickened with flour, with onion, carrot and grated apple adding body, and everything is served over rice with peas. The curry here is gentle and family-friendly, closer to an old-fashioned household curry than anything fiery. It costs little and feeds a crowd.
Instructions
- Heat the oil in a large, deep frying pan over medium heat. Brown the sausages all over for 6 to 8 minutes, then lift them out and cut each into 3 pieces.
- In the same pan, cook the onion and carrot for 6 minutes, stirring, until soft.
- Stir in the flour and curry powder and cook for 1 minute.
- Gradually stir in the stock, then add the tomato paste, apple, sugar and sultanas if using. Bring to a simmer, scraping up any browned bits from the pan.
- Return the sausages to the pan and simmer uncovered for 20 minutes, until the sauce is thick and the sausages are cooked through to 71°C (160°F).
- Stir in the peas for the last 3 minutes. Serve over rice.
Tips
- Thin sausages cook faster and give a better ratio of sausage to sauce. Thick sausages need an extra 10 minutes of simmering.
- For more heat, add 1/2 tsp chili powder with the curry powder. If the sauce gets too thick, loosen it with 100 ml (scant 1/2 cup) of water.
