Green or brown lentils hold their shape when cooked, which suits a skillet dinner. They simmer in the same pan as sausage, carrots, celery and onion, soaking up the savory fat and stock without any presoaking. The dish is filling and cheap, and it tastes even better the next day. A splash of vinegar and a spoonful of mustard at the end sharpen the flavor. Serve it with crusty bread or over a scoop of mashed potatoes.
Instructions
- Heat the oil in a large deep skillet over medium-high heat. Brown the sausage rounds for 5 minutes, turning, then move them to a plate.
- Add the onion, carrots and celery to the fat in the pan and cook for 6 minutes until softened. Stir in the garlic, thyme and tomato paste for 1 minute.
- Add the lentils, bay leaves, stock, salt and pepper and bring to a boil.
- Return the sausages to the pan, reduce the heat to low, cover and simmer for 25 to 30 minutes, stirring now and then, until the lentils are tender and the sausages reach 74°C (165°F). Add a splash of water if the pan looks dry.
- Remove the bay leaves and stir in the mustard and vinegar. Taste for salt.
- Scatter with the parsley and serve.
Tips
- Go easy on the salt at the start if your stock is salty, because the dish reduces. Taste at the end.
- Red lentils turn to mush in this dish. Use green, brown or French green lentils, which keep their shape.
