Revuelto gramajo is the Argentine scramble: crisp fried potato sticks and strips of ham and onion folded into softly scrambled eggs. It is a fixture at casual restaurants and a smart way to use leftover fries and ham. The key is to keep the potatoes crisp by adding them last and to cook the eggs gently. Serve it straight from the pan with chopped parsley and a green salad.
Instructions
- Rinse the potato sticks in cold water, then drain and dry them very well with a clean towel.
- Heat 2 cm (3/4 in) of oil in a wide, deep skillet to 175°C (350°F). Fry the potatoes in two batches for 6 to 8 minutes until golden and crisp. Drain on paper towels and sprinkle with salt.
- Pour off the frying oil, wipe the pan and heat 1 tbsp of fresh oil over medium heat. Cook the onion for 5 minutes until soft.
- Add the ham and cook for 2 minutes until lightly browned at the edges.
- Beat the eggs with the 1/2 tsp salt and the pepper. Pour them into the pan, lower the heat and stir gently for 2 to 3 minutes until just set but still creamy.
- Fold in the fried potatoes, sprinkle with parsley and serve right away.
Tips
- For a shortcut, use leftover fries or good-quality frozen shoestring fries. Crisp them in a hot oven before folding them into the eggs.
- Crispy bacon or cooked chorizo can replace the ham. A handful of peas stirred in with the eggs is a common addition.
