Zucchini can turn watery in the oven, but a hot tray, a single layer and no early salting keep it browning instead of steaming. The cherry tomatoes burst into a quick sauce that coats the zucchini, garlic and oregano roast alongside, and Parmesan melts over the top for the last few minutes. Torn basil goes on at the end. It takes 10 minutes of work and goes with grilled meat, fish, pasta or a fried egg.
Instructions
- Heat the oven to 220°C (425°F) and put a large rimmed baking tray inside to heat.
- Toss the zucchini and whole tomatoes in a large bowl with the oil, oregano, salt and pepper.
- Carefully tip the vegetables onto the hot tray and spread them in a single layer with space between the pieces.
- Roast for 15 minutes, then stir in the garlic. Roast for 5 to 8 minutes more, until the zucchini has browned edges and the tomatoes have burst.
- Sprinkle with the Parmesan and roast for 3 to 4 minutes, until it melts and starts to turn golden.
- Drizzle with the balsamic vinegar, scatter over the basil and serve hot or warm.
Tips
- Do not salt the zucchini ahead of time, and do not crowd the tray. Use two trays if needed, because crowded zucchini releases water and turns soft instead of browning.
- Leftovers are good tossed with pasta, spooned over toast with ricotta or folded into an omelet. For a dairy-free dish, skip the Parmesan and add toasted pine nuts.
