Roshi (Maldivian Flatbread)

Roshi is the flatbread of the Maldives, served at breakfast with mas huni and at dinner with curries. The dough is kneaded with a little coconut oil, rested, rolled thin and cooked on a hot dry pan until it puffs and browns in spots. It is similar to chapati but often a little thicker. Warm roshi from the pan, brushed with a touch of oil, is what you want.

Instructions

  1. Mix the flour and salt. Stir in the coconut oil, then add the warm water gradually and knead for 8 minutes into a smooth, soft dough.
  2. Cover and rest for 30 minutes.
  3. Divide into 8 balls. Roll each on a floured surface into a thin round about 18 cm (7 in) wide.
  4. Heat a heavy skillet or griddle over medium-high heat until very hot. Cook one roshi at a time for about 1 minute, until bubbles form and the underside has brown spots.
  5. Flip and cook for 30 to 40 seconds more, pressing lightly with a cloth if it puffs unevenly.
  6. Brush with a little coconut oil and keep warm wrapped in a clean cloth while you cook the rest.

Tips

  • A very hot pan gives soft, puffed roshi. A pan that is too cool dries them out into crackers.
  • Whole wheat flour is traditional in many homes and gives a nuttier flavor. Mix half and half for a softer bread.
