Roti gluay is the crisp, buttery banana pancake sold from carts at night markets across Thailand, folded into a square parcel and finished with a drizzle of condensed milk. The roti dough is stretched very thin, filled with sliced banana and a little egg, then fried on a hot griddle until golden and flaky. The dough is easy to make but needs a long rest to stretch properly.
Instructions
- Mix the flour, salt, sugar, egg, water and melted butter into a soft, slightly sticky dough. Knead for 8 minutes until smooth and elastic.
- Divide the dough into 4 balls and coat each generously with oil. Cover and rest for at least 1 hour.
- Oil a clean work surface. Flatten one ball with oiled fingers, then stretch and slap it out as thin as you can, turning it, until it is almost translucent. A rolling pin works too.
- Heat a large nonstick pan or griddle over medium heat and melt 10 g (2 tsp) of the butter. Lay the dough in the pan.
- Arrange one sliced banana in the center and drizzle with a little beaten egg. Fold the four sides over the filling to make a square parcel.
- Cook for 3 to 4 minutes per side until deep golden and crisp, adding a little butter. Repeat with the rest.
- Cut each roti into squares, drizzle with condensed milk and sprinkle with sugar. Eat warm.
Tips
- A long rest relaxes the gluten, which lets the dough stretch thin without tearing. If it springs back, rest it for 15 more minutes.
- Try chocolate spread or peanut butter in place of banana, or a savory filling of egg and chopped scallion.
Questions and answers
Can I make the dough ahead of time?
Yes. Oiled dough balls keep well in a covered container in the fridge for up to 24 hours. Bring them to room temperature before stretching.
Can I use store-bought roti or paratha?
Yes. Use frozen roti or flaky paratha, fill with banana and egg and fry in butter. The texture will be thicker and less crisp.
How do I stop the roti from tearing?
Oil your hands and the surface well and use a soft, well-rested dough. Stretch gently from the center outward, and patch small tears with extra dough.
