When corn, zucchini and tomatoes are in season, this skillet makes the most of them with very little work. The sausages are browned first, so they flavor the pan, then the vegetables cook quickly in the rendered fat until the corn is lightly golden and the tomatoes just collapse. Fresh basil goes in at the end. It is a good way to use summer vegetables, and you can serve it as it is, with bread, or over rice.
Instructions
- Heat the oil in a large skillet over medium-high heat. Brown the sausage rounds for 5 to 6 minutes, turning, until golden. Move them to a plate.
- Add the onion to the fat in the pan and cook for 3 minutes. Add the zucchini and cook for 4 minutes, until lightly golden.
- Add the corn, salt, paprika and pepper and cook for 3 minutes, stirring now and then, until the corn is just golden.
- Stir in the garlic and tomatoes. Return the sausages to the pan and cook for 3 to 4 minutes, until the tomatoes soften and the sausages reach 74°C (165°F).
- Off the heat, stir in the vinegar and basil and serve.
Tips
- Do not crowd the pan. Use a large skillet or cook in two batches so the vegetables brown instead of steaming.
- For a little heat, add a pinch of chili flakes with the paprika, or finish with extra torn basil.
